El Callizo

We’re back from our Easter holidays in Aínsa, a beautiful town in Huesca, Aragón. And we’ll never forget Saturday night’s dinner at the restaurant “El Callizo”.

At this restaurant—where I’m inaugurating a new blog category (and what an inauguration)—innovative, sophisticated, and research-driven cuisine comes together perfectly with great bread, excellent red wines (Somontano), and a more than reasonable price.

And while the food is important, the company is just as important, if not more so: Laura, Ray (Jordan), Stefa, Dani (Frank), and Gemma. Five fantastic days!
